Today’s Lunch

Cubes of potatoes fried in little bit of coconut oil and then mixed with curly kale and little bit of chicken left over. If potatoes are not fully cooked you can put them in broil in the oven. I added a tomato.

On the pan, stir fried some onion and coliflower and two eggs. Seasoning was turmeric, salt and base of little coconut oil in the pan before stir fry.

Cooking Healthy is not that BAD!

Add ingredients that form a meal. No need to have name of the dish….
The spices that i use the most is oregano, thyme, cilantro, turmeric, curry, cayenne pepper-love it-, basil and a base 21 organic ingredients from Costco is deliciuos… Salt only sea salt or pink sea salt.

Chicken Soup
Chicken, celery, carrots, sweet potatoes, squash, cilantro, onion, garlic, potatoes, seasonings. I add lots of turmeric always to the soup. It gives a nice color and also has very good properties.

Hot Salad or Stir Fry
Shered carrots, white onions, purple cabbage, mozarrella cheese, black beans cooked, kale served with Freekeh grain and avocado

Mushroom Portobello, onions, purple cabbage, broccoli stir fry.

Stir fry with onions, portobello mushrooms, carrots, curly kale served with baked sweet potatoes and brown rice.

Update on what’s growing in our balcony.

We have been traveling a lot! So we just started again to plant some seeds and see if we can eat some of our veggies or greens this summer.
We continue to have the lot in the community garden, which ill share pictures later on.

Basil, moringa, cuban oregano, aloe vera and planted some Onion seedling

Sweet potatoes, and normal potatoes. Then on the side, some seedlings of cilantro, chives, thyme and basil. The only one growing is the basil.

Bur Gerkin Cucumber, grows perfectly fine in Hot HOT weather. So perfect season is Summer at least here in Florida (Miami). They give bunch of fruits.

These are peppers and aloe vera. The Peppers, before we left in February, we ate a pepper and saved the seeds which we planted in this pot before we left. We came back and found this. My parents were here in my place for 15 days so, they took care of them, but the other time they just wanted to live and survive until April 29 the day we came back home and been watering it since then.

We are BACK

Ok, so; we’ve been traveling a lot; spent some time in Dominican Republic (la isla del sol) and then Argentina. Both places we travel around enjoying whatever each place had to offer. While in Dominican Republic we were able to do a workshop / course of a weekend in Rancho Baiguate, Jarabacoa where we learned some natural method to build clay house using the technique called “Quincha”. We got to know very cool group who i get to know more and more thru social media.
Then, since this workshop was such a success for us, we decide to do the 21 day course in La Patagonia Argentina with el maestro del barro “Jorge Belanko”. What a great experience. It was so awesome to get to know all these people with such good stories. Very grounded in terms of living, recognizing what is really important, to live, healthy, happy and simple aroud of people with same interest.
The exact location of the course is called “El Hoyo de Epuyen”. Very nice little town with a huge variety of fine fruits growing wild, like blackberries, pear, apples, plums, walnut trees, ext. During the night is really cold even in summer experiencing temperatures during the day as hot as 85-95F and nights as low as 35-55F. Crazy!
